ingredients
1.5 lbs pork shoulder, cut into chunks
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 can (14 oz) diced tomatoes
1/4 cup kalamata olives, pitted and chopped
2 tablespoons capers
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Fresh parsley, chopped (for garnish)

Season the pork chunks with salt and pepper.
Select the "Sauté" function on the Instant Pot. Heat olive oil and sauté the pork chunks until browned on all sides. Remove the pork from the Instant Pot and set aside.
Add chopped onion to the Instant Pot and sauté until softened, about 3-4 minutes. Add minced garlic and cook for an additional minute.
Return the pork to the Instant Pot and add diced tomatoes, kalamata olives, capers, dried oregano, and red pepper flakes. Stir to combine.
Close the lid of the Instant Pot and set the valve to the sealing position. Cook on high pressure for 30 minutes.
Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
Serve hot, garnished with chopped fresh parsley.
